The Snack Pack: January is Soup Month!

Warm and delicious vegetable soup is a great after school snack

Happy January! As the weather gets colder and the snow piles up, there’s nothing quite as comforting as a warm bowl of soup. And what better month to celebrate soup than January, which has been officially designated as Soup Month!

Soup is a great meal for kids because it’s easy to make and customize to their taste preferences. You can make a pot and serve it up as lunches or after school snacks for the next few days. This is one recipe that actually tastes better the day or two after you make it.

Plus, it’s a great way to sneak in some extra vegetables and nutrients! Here’s a simple recipe for a delicious and kid-friendly soup that you can make at home:

Easy Vegetable Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 carrot, peeled and chopped
  • 1 celery stalk, chopped
  • 1 potato, peeled and chopped
  • 1 cup frozen peas
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried basil
  • salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrot, and celery and cook until the vegetables are tender, about 5 minutes.
  2. Add the potato, peas, broth, and basil to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes, or until the vegetables are tender.
  3. Use an immersion blender to blend the soup until it reaches your desired consistency (you can also use a regular blender, but be careful as the soup will be hot).
  4. Add salt and pepper to taste. Serve the soup hot and enjoy!

Optional: You can add some cooked pasta, rice, canned chickpeas, or diced chicken to make this soup a more complete meal. You can also top the soup with some shredded cheese or a dollop of sour cream for extra flavor. Include crackers or a piece of toast for dipping.
